The 2010 Conference for Food Protection workshop addresses one of the most difficult challenges facing food safety professionals; how to motivate food employees to incorporate good food safety practices into their behaviors in food facilities. Why do food employees who have been educated in the causes of foodborne illness and trained in the proper food safety procedures still engage in unsafe practices?
